Has somebody noticed some water retention while Peating ? I'm quite puffy since a few days
I am using a lot of salt (more than 3 teaspoons/day) but it seems that salt is in fact a diuretic
I am also using a lot of gelatin (not hydrolyzed collagen) in milk, and along with a calming down feeling, I sometimes feel like it makes me bloat (at the same time gelatin retains water outside the body, perhaps the same in vivo -- but would be bold for me to assert whereas I have no idea of the cellular mechanism behind water retention)

Any clue to help me ?

The first clue may come from the type of gelatin used.

Undissolved gelatin can be food for bacteria, and this can lead to digestive disruption and a bloated feeling. To use non-hydrolyzed gelatin in milk you will have to use a hot liquid (milk, coffee, or water) to fully dissolve the gelatin since non-hydrolyzed gelatin is not cold soluble. The hydrolyzed gelatin is cold soluble and is more convenient to use with cold beverages, but is more processed than the non-hydrolyzed variety. Remove any undissolved gelatin (via a strainer for example) prior to drinking to avoid issues.

Thank you Rob, gelatin dissolution was indeed a question for me, and for convenience I have consumed it unheated
From now on I will implement your advice and keep you informed
(the gelatin used is common dietary gelatin that can be found in France, however ingredients are not specified, maybe it's pure gelatin)

edit : I have found this comment on a web forum :) :

"PJ, make sure you have the gelatin thoroughly dissolved, because undissolved gelatin may cause bloating. According to Dr. Peat, hydrolysed gelatin is usually better tolerated."

I am not sure who did the advising in the quote you posted, but I disagree. If both are prepared properly, non hydrolyzed is preferred over hydrolyzed. The hierarchy would be broth>non hydrolyzed>hydrolyzed.

The heavy digestion feeling has vanished with correct dissolution... but I still experience bloating ; since I consume much of it (near 50g/day) it could be too much ?
Or it's the quality...

When used properly, gelatin is usually digested quite well. Are there any other possible culprits or contaminants in the diet that could account for the bloating?

That gelatin gave me bloating when taken alone... But i feel pretty delicate at the present time. It is likely that it goes well later, if i reach putting my body-mind in order.
By the way, i have just received some hydrolyzed collagen, for the time being I feel great with no side effect !
